Lamb loin with crispy butter crust with herbs, the Greek style of taste



No more barbecue sauce over your lamb chops! Prepare a Greek style delicious and crispy crust with herbs and spices and you will be delighted from the flavored result.

You will need to buy a whole piece of lamb chops and preserve it as a whole. 1 kgr of lamb is enough for 4 persons considering that you will accompany it with baked potatoes and fresh salad.
Wash the chops thoroughly, tap it to dry it and rub it with salt and pepper. Pour a little olive oil in a baking pan and place the lamb in it with its flesh looking up.

Now, we will prepare the mix for the crust. In a deep bowl, we mix 2Tbsp of butter, 2 crashed cloves of garlic, 1Tbsp of chopped fresh dill and 1tsp of dry basil. You spread the mixture on top of the flesh of the lamb and you may add 3-4 pieces of butte and a small rosemary branch, also.  

You cover the lamb with a foil and you put the baking pan in the oven to get cooked for about an hour in 170ο C. Check with a knife whether the meat is done. The knife must be inserted without pressure and the meat should feel soft. Remove the foil a few before taking the baking pan out of the oven so as to get crispier on the outside.

Serve the lamb chops in a big plate with potatoes baked flavored with rosemary and Greek salad with feta cheese.

A good bottle of wine is a necessity for this plate.
